If you’re looking for an appetizer that will knock your guests’ socks off and is relatively easy to make, then we have a treat for you. This stuffed cherry tomato appetizer comes from Selections by Sisters, and was originally intended for a super bowl party. However, we think it’s so amazing it would be perfect for a wedding shower! Here’s how to create it:
What You’ll Need:
Cherry tomatoes (we figured about 4-5 per guest)
Bacon (1 lb per 24 tomatoes)
½ Cup Mayo (per 24 tomatoes)
½ cup finely chopped green onions (per 24 tomatoes)
How to Create Them
Start by slicing the tops from the tomatoes carefully, and then using a small melon baller to remove the insides of the tomatoes. Allow the tomatoes to drain by turning them upside down for a few minutes. Finely dice and fry the bacon and then allow it to drain.
Next, you’ll want to mix the bacon with the mayonnaise and onions. Using a small spoon, fill the tomatoes with the mix. You’ll want to make these the day before or the day of the wedding shower, and allow them to sit in the fridge for several hours. This allows the flavors to develop and mix together. The result is absolutely delicious!
If you want to mix it up a bit, you can sprinkle parmesan cheese and pepper on top of the tomatoes, or slice black olives and top each one with a slice. The possibilities are endless and they’re really, really great. They’re perfect for a summer wedding shower.
